New Zealand Spinach is a heat-tolerant green that thrives in warm weather where traditional spinach struggles. This unique plant produces tender, triangular leaves with a mild, slightly salty flavor, perfect for salads, steaming, or sautéing. Unlike true spinach, New Zealand Spinach is a sprawling plant that grows vigorously throughout summer, providing continuous harvests. It matures in about 55–65 days and prefers full sun and well-drained soil. Sow seeds after the danger of frost has passed, spacing them 12–18 inches apart, and keep the soil consistently moist for best growth. Packed with vitamins A and C, this hardy green is an excellent choice for gardeners who want fresh, nutritious leaves all season long.
