Cylindra Beets are a unique heirloomm variety known for their elongated, cylindracal roots that grow 5-6 inches long. This shape makes them ideal for uniform slicing and easy processing, especially for pickling. The roots have smooth, dark red skin and tender, sweet flesh with minimal zoning. Cylindra beets mature in about 50-60 days and produce high yields in well drained soil. Their compact toops are also edible and flavorful, perfect for greens.
